    I am gradually moving away from eating meat and fish (finding it much easier than expected actually) and just wondered if those of you who are vegetarian or vegan have any great recipe ideas that you would be willing to share in this thread?

    I wouldn’t call myself Vegetarian/Vegan, but this probably one of my favourite vegetarian recipes:

    BEAN BURGERS WITH DILL SAUCE

    Burgers:
    2 cups canned black beans, rinsed and drained
    1/2 cup dry seasoned breadcrumbs
    1/3 cup chopped fresh dill
    1/3 cup chopped red onions
    1/4 cup finely chopped carrots
    2 tablespoons cornmeal
    1 egg
    1 1/2 teaspoon minced garlic
    1/4 teaspoon salt

    Sauce:
    3 tablespoons light sour cream
    2 tablespoons light mayonnaise
    2 teaspoons freshly squeezed lemon juice
    1/4 to 1/2 teaspoon minced garlic
    1 tablespoon chopped fresh dill (or 1/2 teaspoon dried)

    In a food processor, combine black beans, breadcrumbs, dill, onions, carrots, cornmeal, egg, garlic and salt. Pulse on and off until well combined.

    With wet hands, scoop up 1/4 cup of mixture and form into a patty. Put on prepared baking sheet. Repeat procedure for remaining patties.

    Bake 15 minutes, turning at the halfway point.

    Meanwhile, make the sauce: In a small bowl, stir together sour cream, mayonnaise, lemon juice, garlic and dill. Serve burgers hot with sauce on side.

    Nutritional info per serving: calories 126; protein 7 g; fat, total 2 g; fat, saturated 0.4 g; carbohydrates 20 g; sodium 262 mg; cholesterol 27 mg; fiber 5 g.

    I stopped eating meat about a year and a half ago, and also found it surprisingly easy. Funny how that happens. I don't really have a specific favorite recipe, but I've recently found a lot of success in various forms of tofu stir-fry. Very easy and quick. Just get some tofu cubes, pan-fry them in about a tablespoon of oil for a couple minutes until starting to brown, then add your favorite vegetables for a couple more minutes, then add your favorite sauce.

    I'm on a plant based diet. I don't really have recipes to share--I'm pretty much a "fling things together cook." They'll be coming after my Gay Membership Card since I'm not a fabulous cook... LOL

    I can say, though, there are a lot of recipes out there--both on the Internet, and also in books. I was really surprised to see how many vegetarian and vegan books my local library has.

    I'm not a vegetarian myself, but my sister teached me how to do banana pancakes, which is a great and simple recipe. :slight_smile:

    In a plate, mash one or two bananas. Then, mix that with a bit of milk (not much), ferment and oatmeal. Add cinnamon if you want. Mix everything.

    Then, just prepare it like a common pancake in a frying pan, adding a bit of oil if needed (but you can do it without oil in some types of pan). You may add sugar if you want, but that's not needed as bananas are already sweet.

    It's something simple and healthy, and it works for a lazy cook like me. : P

    I'm far from being a vegetarian, but I've recently started making buffalo cauliflower bites which I think are really good.

    1 head of cauliflower
    5 oz Dave's Gourmet Cool Cayenne Pepper Sauce (or Frank's Red Hot, I use this because it's way less salty)
    4 tbsp melted butter (I usually use less)
    1 oz white vinegar
    1/2 tsp garlic powder
    Ground black pepper
    Panko bread crumbs

    Mix everything together (except for panko), mix the cauliflower in the sauce mixture, and then coat in panko and put in the oven at 375 for about half an hour.

    I've been a vegetarian for almost a year and a half now and it was a pretty easy transition for me since I didn't like meat that much anyway. There are many recipes you can find online. One you could try is https://cookieandkate.com/recipes/. It's a great website for vegetarian and vegan recipes.

    I was born into a vegetarian family, so I've grown up on vegetarian food. Over the last 2 years, due to dietary concerns, I've been drinking and eating more vegan options (in an effort to forgo animal milk products). So if you're interested I can share some vegetarian recipes. Most of them will be Indian influenced though, rice & flatbread oriented. So let me know if you're interested @PatrickUK

    I’m not vegan...but my girlfriend is lol. And because of that I’ve been doing more research on how to make vegan dishes so that when we can be together I’ll have ideas of things she might enjoy. I follow a few vegan accounts on Instagram and Pinterest that have good ideas and I really like this website:
