Okay, what the hell would I do. I'm catholic and a lesbian and I still want to get married with a wedding. Still get the legal papers and stuff but how would I be able to have a wedding if it needs like a priest to proctor it?? And also how do the legal papers even work. What do you do?

You don't need a priest, rabbi, shamman, or any religous figure to be married. What makes you married (in the eyes on the government) is just a piece of paper that you get filled out down at the courthouse. You'll need 2 witnesses i think, if you don't feel comfortbaly bringing a friend or family member they usally have people who will stand in as witnesses.
