I enjoy the flow and sound of Japanese—I can barely speak it myself though.

And French and German I find great for swearing. ^^

Otherwise, English. I keep finding myself amazed at its ability to use one verb to convey an idea for which French needs ten.

Dutch. No other reason then that it's what I'm best at, obviously, since I'm from The Netherlands :0)

My favorite's probably Greek, although I can't speak it. I also love ASL, French, German, Hebrew, Polish and Russian. I can only speak fluent English which is the official language of my country, I have started trying to learn some of these, however...

French  I majored in French and university and then did post-grad in French.
I picked up Korean while I lived in Korea but didn't really get that deep into it.

I loved Russian and started teaching myself years ago. I like it's complexity which I think makes it a beautiful language too.

German, it's just so logical and makes so much more sense than say French, which I also speak.

I think the process of learning a language is my favorite. Any language. Each one has its own twists, and I love finding ways to make the learning fun. I've been learning three languages (German Japanese and Slovak), and I find it pretty interesting how my manner of studying them is different for each. At the moment, in Japanese I'm focused on kanji (I can read up to N2ish but can only write really only to N4), Slovak I'm focused on mastering endings, and German I just need to develop my vocabulary.

If I really had to decide which one I like most, it'd likely be German. German has a little bit of everything but nothing's overdone, regarding special quirks or things that make it challenging. Its grammar is different from English but very consistent, it has cases but they're very easy, fun but not bizarre pronunciation/accent (I love the r and eu sounds), land like Slavic languages I can also understand dutch/swedish/norwegian/afrikaans. Overall, there's not really any downside to German.
