There's a lot I'm still watching, some I'm still trying to track down, and others I need to start. I might update this later, but here's my current list of what I'm either seeing now or waiting on checking out.

What I've Seen (Completely or Needing to finish; bolded are on being watched ATM or are on my current watch list with Netflix or KissAnime):

    - Ouran High School Host Club
    - Sword Art Online / Sword Art Online II (I can't wait for SAO III)
    - Deadman Wonderland
    - Cowboy Bebop
    - Case Closed / Detective Conan (Sad that the dub project never made it past S5)
    - Lupin III
    - Highschool of the Dead (OMG so much fan service, but zombies make my knees weak)
    - Death Note
    - InuYasha (Super drawn out and repetitive at times, but I'll watch it if it's on)
    - Pokemon (Bless the Bulbapedia for having a guide for the series and movies or I'd be so lost)
    - Princess Jellyfish
    - FLCL

With the "Seen" list, I like/love them all, so far with the exception of FLCL which I still need to wrap up and, Lupin III which I've only seen bits and pieces of.

What I Need to Watch (Anything where I've seen two or less episodes; bolded are on my current watch list with Netflix or KissAnime):

    - Trinity Blood
    - Full Metal Alchemist
    - Black Butler
    - Ghost in the Shell
    - Wandering Son
    - Blue Exorcist (only saw one episode, so it doesn't count)
    - Trigun (Same reason as Blue Exorcist)
    - Blue Gender
    - Blood+
    - Bleach
    - Attack on Titan (I'm so horrible for not seeing this yet, but I'm stoked)
    - Tokyo Ghoul (Super excited for this)
    - Wolf's Rain (I missed out on it during Adult Swim's running of it)
    - One Piece
    - Neon Genesis Evangelion
    - Hetalia (My friends wouldn't stop talking about it when we were in high school, and I've only see a little bit of it. All I remember from then was my friends gave everyone in our circle a nickname of someone from the series--and I was Korea)

Seeming everyone else has posted what they've seen: I will too. I'll highlight ones which anyone should watch because I really loved them XD

    - Abashiri Ikka (avoid with a ten foot pole)
    - Aki Sora (avoid with a 50 foot pole)
    - Akira (Definitely due to its effect on popular culture)
    - B Gata H Kei (My friend worships this show and it's funny - but it's not THAT special)
    - Cowboy Bebop (Really good show) and Cowboy Bebop the Movie
    - FLCL (I still don't understand what was going on in this)
    - Fullmetal Alchemist Brotherhood (I loved this - but prefer the manga tbh)
    - Ghost in the Shell (It was pretty good)
    - Interstella 5555 (Only watch this if you love Daft Punk)
    - Mass Effect: Paragon Lost (Eh - play the games instead)
    - Mononoke Hime(Princess Mononoke) (Fantastic movie)
    - Neon Genesis Evangelion (The one that got me into anime - you either love it or hate it. I love it with a passion) also The End of Evangelion, Evangelion 1.0, Evangelion 2.0, Evangelion 3.0 and the upcoming Evangelion Final are the movies.
    - Welcome to the NHK! (Sometimes spookily realistic with its depictions of mental illness - don't watch during a down period)
    - Plastic Memories (Ugh - mostly garbage)
    - Pokemon Origins (If there is only one Pokemon anime I ever watch - it'd be this one)
-Sakura Trick (Really really really cute Yuri)
-Shoujo Sect (Ahh avoid with a ten foot pole)
-Strawberry Panic (One of the first popular Yuri)
    -A Certain Scientific Railgun (Great)
-Tokyo Magnitude 8.0 (Only anime that has made me cry as of this post)

    Next to watch:
    - Shirokuma Cafe. I'm in a downer mood and want to watch a funny anime.

^I love Evangelion as well. What a fascinating show. Others I enjoy:

Infinite Ryvius, Paranoia Agent, Digimon (yep!), Puella Magi Madoka Magica, FLCL, Serial Experiments Lain, and more.

I've been meaning to see Cowboy Bebop, given the reputation has, but have still yet to see it.

Nope, the best is at the top. I didn't dislike Vandread, I just wasn't into it that much.

Ah, Soul Eater was one of the ones I forgot to list. I've only seen a few episodes out of order, but I think it's pretty good!

    HELL YEAH (!)

    What I've seen so far:
Pokemon, Digimon, Sailor Moon (we start with the basics)
    Death Note (isn't it obvious?)
Attack on Titan (they scream a lot in that one - love it )
Code Geass ( Lelouch (*hug*) )
Bleach (my fav soap opera ever. It's even got monsters :icon_wink )
Fullmetal Alchemist: Brotherhood (my personal favourite)
    I reccomend all of these.

What I yet have to watch:

    NG Evangelion
    Tokyo Ghoul
    Cowboy Bebop
    Steins Gate...

    What I won't be watching:

Elfen Lied (saw a few scenes, didn't like it)
Naruto, One Piece (ain't nobody got time for that)

What I tried to watch but failed:

    Monster :icon_sad:
    Mirai Nikki

When it comes to movies I've watched some Poke-movies and Spirited away (AWESOME)

    Yep, that's about it.

p.s. what's the stuff with this 'Hetalia'? Is it any good? It looks flashy, but does it have some kind of a story?

I do but only in short intervals. I'm usually not bothered to keep up with an anime if it's got like a billion episodes or is into it's fifth season but if the art is amazing, the voice acting on point and the character development/plot intriguing then I'll watch the hell out of an anime.

Currently, I'm in the middle of watching Mushi-shi (the art is fricking fantastic!) and debating if I want to continue watching Hetalia Axis Powers... I think the only animes I've finished completely is Ouran High School Host Club, School Rumble, Clannad, Fruits Basket and then all most of the Studio Ghibli films.
