I spent a semester abroad and my roommate played in some really great folk bands. Check out Orkiestra św Mikołaja and Caci Vorba for modern versions of traditional Polish and Balkan music. You can find both on YouTube.

There's a folk metal band from Toronto called Protokult. Their members are Russian, Polish, etc and they use a lot of folk instruments in their music. Just off the top of my head include a psaltry, harp, jawharp, and a few other things I forget the names of. They're heavily influenced by Eastern European folk music. https://youtu.be/I2hSqUry98U
As far as I know polka is originated from the Czeh Republic, so that's middle-Europe. It might counts because of its influence.
This is pretty cool. I'm surprised how similar Greek traditional music is to polish traditional musc, especially since they are the breadth of Europe apart. This kind of reminds me of Jethro Tull, but more... European, obviously. Yeah, I'd say polka counts as European folk. Thanks for the recommendations from y'all. Has been very helpful for my endeavors.
